I think this is it. I think I've finally identified my favorite steak of all time. This was my second time having the "Dirty Rib Eye" at @antique_bar_bakery and it was even better than the last time. Deeply penetrating flavors. Bright herbal and citrus flavors. Earthy and funky flavors. Primal flavors. This steak has a bark similar to BBQ, only it develops faster and isn't made up of mopped-on sauces and a cloyingly reduced overkill of spices. No. It's meat purity, accentuated by herbs and heat. @chefpaulgerard2 is a towering maniac of talent who has managed to tame a recklessly insane century old 1500°F oven, whipping it to produce the best tasting beef I've ever had.
