It’s Taco today, don’t think you can’t participate because you can! 🌮🌮This is a vegan, gluten free, grain free, low fat, yet highly satisfying taco recipe. Could eat this everyday. •
I made my own tortillas using cassava flour and water, mixing until it’s a dough, rolled them out between pieces of parchment paper into tortillas, cooked them on a pan, and baked them for a crispy taco. (Honestly though, I prefer them soft). You can also use a store bought @sietefoods or @potapas tortilla to make this recipe even easier.

Recipe
Smoky Queso:
•2-3 tbsp. raw cashews, soaked for an hour
•1 medium/large gold potato, steamed
•Juice of one lemon
•Smoked paprika, to taste (I prefer it really smoky so I add a lot of this)
•Cayenne pepper, to taste
•Chili powder, to taste
•Dash of Himalayan salt
Filling:
•Romaine lettuce, shredded or finely chopped
•Red onion, diced
•Tomatoes, diced
•Cilantro, chopped
•Jalapeno, sliced (optional)
•Refried beans ([optional] I like Whole Foods brand—it doesn’t contain any added oils or junk)
Place all the queso ingredients into the blender and blend until a thick, creamy, melty, cheesy texture forms. Taste and adjust seasonings as necessary. Take a taco shell or tortilla and spread a layer of refried beans on the bottom. Top with the other fillings and drizzle a generous amount of queso all over the taco. Grab a couple napkins and stuff your face like I know you can🙃
