Been so into roasted veggies lately! Completely satisfying and simple which is all I’m after these days.
I preheated the oven to 375 F, placed all the veggies on a baking sheet lined with unbleached parchment paper, drizzled with a little olive oil, sprinkled with some sea salt and pepper and baked until done. I pre-boiled the potatoes and smashed them down a little bit with the back of a wooden spoon before baking. The asparagus and tomatoes came out first while the eggplant and potatoes cooked a little longer :)
