I don’t have the biggest sweet tooth because of all the fruit I eat buttttt a treat like this is always welcomed🤤 this is @feastingonfruit ‘s vegan cookie dough recipe with creamy banana ice cream and it did not disappoint. The only thing I did differently was add a tiny bit more maple syrup to the mixture and froze the cookie dough instead of refrigerating it which I liked better personally :) @feastingon fruit Recipe:
•1/4 cup nut/seed butter (I used sunflower seed butter)
•1/4 cup maple syrup (I added about 1 tbsp more)
•1/4 cup apple sauce •1 tsp vanilla extract (mine was alcohol free)
•2/3 cup coconut flour
•1/4 tsp salt •1/3 cup chocolate chips
Whisk the nut/seed butter, maple syrup, apple sauce, and vanilla. Stir in the flour and salt. Fold in the chocolate chips. Press into a flat rectangle on a sheet of wax paper (I used parchment and it worked just as well) and slice into small chunks. Refrigerate for an hour or so (I froze) until firm.
For the banana ice cream I just put two frozen bananas (make sure they’re ripe and peeled before freezing) a bit of coconut milk, and some vanilla extract in a food processor and processed until creamy soft serve ice cream🍦
